Ingredients:
- 3 large egg yolks, room temp
- 1/2 granulated sugar, divided in half
- 1/2 tsp vanilla extract
- 4 large egg whites, room temperature
- 1 cup all-purpose flour
- Powdered sugar for dusting
Instructions:
- Preheat oven to 350 degrees.
- Whip egg yolks, half the sugar, and vanilla with a mixer until the yolks are a lighter yellow and set aside.
- Whip egg whites with a mixer until soft peaks form.
- Add remaining sugar and whip whites until much larger in size, with stiff peaks. (As fluffy as you can get them)
- Gently fold the yolks into the whites until almost combined.
- Sift flour in and fold until combined.
- Use a piping bag to pipe lady fingers onto your baking tray.
- Dust ladyfingers with powdered sugar and bake for 12- 15 minutes or until firm.
